Green Lentil and Bulgur Salad

 

I received this recipe in the mail. It is really very tasty, filling (satisfying) salad that not only appeals to the eye but brightens up your table. I would like to thank the creator.

 

 

Ingredients:

 1 water glass dry green lentils
1 water glass dry coarse bulgur wheat
4 long green peppers
2 sweet red bell peppers
1/2 bunch parsley
2 carrots
1 dry onion
3 green onion stalks
1 dessert spoon sumac
1 dessert spoon thyme
1/2 dessert spoon fresh basil
Juice of 1 lemon (less if you like)
1/2 tea glass olive oil
Salt

Preparation:

 

1.Place the bulgur in a saucepan, cover it in water (the water shouldn't be more than 1 cm above the bulgur), cover the saucepan with a lid bring it to a boil, then lower the heat and let simmer until soft. You can add a few drops of olive oil if you like.

 

 2.Place the washed lentils in a medium-sized saucepan, cover with water and cook until soft

 

 3.Wash and dice the carrots then cook them until tender

 

 4.Wash and chop the peppers, green onion and parsley.

 

5.Slice the onion into rings

 

6.Combine the cooked bulgur and lentils and vegetables in a deep dish and toss with the olive oil, lemon juice, salt and herbs.
